Vegetable bake “warm salad”

This one comes straight from my mom’s kitchen in Cape Town. It’s her recipe, a fun, easy way to jazz up veggies and turn them into something comforting. Whenever I visit South Africa, she always makes it for me, and honestly? I can eat a whole plate on my own.

It’s simple but magical, just fresh vegetables, a splash of cream, and a packet of South African Knorr Brown Onion Soup mix. That little packet adds all the depth and flavour (though I’m convinced my mom’s touch is what really makes it special 😉).

I’ve recreated it here in Toronto with lactose-free cream, and it still feels like home on a plate.

INGREDIENTS

• Carrots
• Broccoli
• Mushrooms
• Sweet potatoes
• Cauliflower (optional)
• 1 packet of Brown Onion Soup or Onion Soup mix
• 250ml fresh cream

INSTRUCTIONS

  1. Preheat oven at 356° F or 180° C.
  2. Pack vegetables in an oven proof dish
  3. Cover vegetables with brown onion soup or onion soup mix
  4. Pour fresh cream over
  5. Bake for about 40 minutes to 1 hour, bake till all vegetables or nice and soft.
