Carrot Slaw

Recently made this recipe, wanted to make a coleslaw to add to some delicious fish tacos, but ran out of cabbage so just decided to make a slaw without the cabbage and mayonnaise and then jazz it up with freshness. Straightforward, easy, refreshing, and tasty. Try it!

INGREDIENTS

• 3 large carrots
• Cilantro (a handful chopped up will do)
• 1 tsp apple cider vinegar or red wine vinegar (add more if needed)
• Juice of 1 orange
• 2 tbsp Dijon mustard
• ½ tsp brown or raw sugar (add more if needed)

INSTRUCTIONS

  1. Grate carrots and add to a bowl, then add cilantro
  2. Add apple cider, orange juice, mustard, and sugar
  3. Mix it all together and there you go, simple yet tasty slaw
