From Cape Town to Costco: Easy Garlic Lemon Trout

A few days ago, I picked up some trout. Well, to be honest, I only did because Costco didn’t have the salmon I wanted (and I love me some Costco 😆). Trout is basically salmon’s meatier cousin, similar in flavour, just a bit richer, so I figured, why not?

Fish and seafood back home can be pricey, especially favourites like salmon. Funny enough, I only really started eating more salmon after moving to Toronto. But this week, I decided to switch things up and try trout. It’s leaner than salmon (at least in my opinion), but still full of flavour.

A couple of nights ago, I baked it in the oven with a simple, flavour-packed sauce of garlic, lemon, olive oil, and a touch of chilli powder. The result? Juicy and perfectly flaky.


Baked Garlic Lemon Trout

Ingredients (Serves 4)

  • 3 trout fillets, skin on
  • 3 garlic cloves, crushed
  • 1 large lemon (juice + zest)
  • ½ tsp chilli powder or paprika
  • 3 tbsp olive oil
  • 1 stick (113g) butter, melted
  • Salt & pepper, to taste

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking tray with parchment paper.
  2. In a small bowl, mix the crushed garlic, lemon juice, chilli powder/paprika, olive oil, and melted butter. (Tip: melt the butter with the lemon juice and garlic to help the flavour soak right into the fish.) Season with salt and pepper.
  3. Place trout fillets skin-side down on the tray and spoon the sauce over them.
  4. Bake for 12–15 minutes, or until the trout flakes easily with a fork.
  5. Serve hot with roasted sweet potatoes or yams and a crunchy slaw or your favourite sides.

Pro Tip: This recipe works beautifully with salmon too, just increase the baking time by a few minutes.
